    Oh man, i didn't see this thread until now and look at all the goodies!

    Here is my contibution!

    Meatballs and Rice

    2lbs Ground beef
    1 box Rice a Roni, beef flavor
    2 eggs
    Garlic powder [ as you like]
    Onion powder [to your liking]
    1 cup water

    Mix ground beef with eggs, garlic and onion seasonings, rice [but not seasoning, put that on the side for now] Form into medium size meatballs.

    pan fry in a little olive oil until brown on all sides.

    Take the cup of water and the seasoning packet from the rice a roni and mix together, pour over meatballs and bring to a slight boil. Reduce heat to simmer and cover. Cook for 30 minutes or until the water has been absorbed by the rice in the meatballs and has formed a brown coating on the meat.

    Enjoy! These are fantastic and go with anything or by themselves.

    Pepperoni Roll

    1 pkg. pizza dough
    30 pieces of snack size pepperoni
    mozzarella cheese [ shredded]
    1 jar of sauce

    Let the pizza dough raise and then roll out on floured surface into a 12in. x 12in. square [ or as close to it as you can]

    layer pepperoni over entire dough leaving about an half inch from the sides.
    layer on top the mozzarella [the more the better!]

    start on one side and roll the dough up to form a 12 inch long roll. Cook in over on 350 for about 20 to 30 minutes or until golden in color. warm sauce and use as a dip after you cut the roll up in 2inch pieces.

    I can eat this stuff until someone tells me to STOP!

    Greek39 Beans

    2 pounds green beans
    6 garlic gloves, minced
    2 cans of diced tomatoes
    1 can of tomato paste
    1 teaspoon of salt
    1 teaspoon of pepper
    1 teaspoon of Dill Weed
    ½ cup of water
    1/3 – ½ cup of Cold Pressed Extra Virgin Olive Oil

    Throw in pot bring to boil then simmer for about 4 hours, stir occasionally.

    Served with the biggest loaf of fresh UN-sliced crusty bread available. If possible make your own, and one huge bottle of Wine.

    I skew this stuff down like a wild animal. Please try and use all fresh produce.

    Here's mine Renee. It should be served with rice though to be a perfect match. If you like Chicken:

    Chicken Adobo
    1 chicken, cut up
    soy sauce
    white vinegar
    handful of black peppercorns
    garlic cloves, peeled (5-15)
    1 large bay leaf
    cooking oil (something bland like canola oil)
    Simmer: Put chicken, peppercorns and bay leaf in a large pot (dutch oven or large high-walled frying pan). Peel garlic cloves, cut a slice into them, and add to pot. (You can use less garlic, but note that garlic powder does not give the same taste or quality.)
    Add soy sauce and vinegar to pot: 5 parts soy sauce to 3 part vinegar. (I just tip the bottle and count "glops" as it pours.) Add some water so the pot is about half full; if you're cooking more, then adjust. Important: the liquid should be pretty brown from the soy sauce, rather than very watered down.
    Cover; simmer on medium heat for 15-20 minutes, then remove from heat.
    Fry: Pour liquid into a bowl and set it aside. (I do this by slightly opening the top of the pot, tipping and pouring into the bowl.)
    Pour some cooking oil into the bottom of the pot and brown the chicken at a high heat. (Cover the pot to keep from splattering.) You may have to take some of the chicken out of the pot to do this easily. You can also brown the garlic lightly.
    Remove from heat and let the pot cool. This is important — otherwise, the soy sauce can end up with a burnt taste. You may also want to pour out any residual oil, if you are big on fat-free diets.
    Boil: When pot has cooled down, pour the sauce back in. Cover, and boil at medium heat for 45 minutes to an hour. Adobo is done when the chicken is cooked and tender.
    Rice

    Serve with steamed rice (fresh, cut-up tomatoes are also a nice side dish, as are sliced bananas). I like white rice or Basmati brown (not the California-grown stuff). Typical for Filipino dishes, though, is white pearl rice.
    As rice takes a while to cook, it should be started along with the adobo. Wash rice before cooking; this means to rinse the rice quickly in water. The water from a second rinse can be used in place of the water in the adobe recipe. The theory is that the starch from the rice water thickens the sauce.
