My recommendations for poker:

US facing sites:
Bodog
Carbon, Reefer or Aced (Merge Network) - I prefer Reefer as they have the best T&C's for players
any Cake site such as Doyle's and Players Only
UB/Absolute - if you don't mind the past cheating issues
FullTilt if you can live with the 60 day rule

Non US sites:
32 Red, Betway, Cool Hand (Microgaming)
Tower and Hollywood (Ongame)
Sun Poker (Playtech)
Interpoker (Boss)
PKR and Betfair are both popular independent rooms

There are other good rooms as well but these are all solid choices.
