I'd say affiliate is better especially earning as a gambling affiliate.
The good thing of a gambling affiliate is that when you work with a revenue share you will earn money for as long as the customer is active. SERPs and visitors of your site will fluctuate but as long as you already have registered and active customers you will earn a steady income.
This way you are a being independent from Google and traffic sources in general.

Yes bboyspyder is spot on, if you attract some good active players (that bet each month) you will receive a steady income stream. This money can then be used to market the site further, gaining more customers and hopefully more money. However there are also drawbacks with revenue share, especially if it is negative carry over. If the gambling site loses money from a player you send them, the revenue becomes negative. This means you have to recoup the losses before making a profit. I personally think being a gambling affiliate requires hard work and lots of time, it is not a case of placing banners on your website then waiting for the pounds to roll in. But if you put the work in, you can be successful. On the other hand I think adsense is easier and quicker to set up but earning potential is lower.

Yeah for sure, social media such as facebook and twitter is very popular right now. Get a lot of people following you and this may result in more players. There is also pay per click advertising, I don't have much experience with this but it can be expensive as gambling keywords are very competitive. Regarding ranking for google, try long tail keywords to get you started, optimise your website and then build relevant links. Good luck with your site playking.

AdSense, as you may or may not know, publishes ads relevant to your website. These ads vary in revenue, and is dependent on not just impressions(number of eyeballs on the ad), but CTR (click through rate) as well. As Louis asked, it would be good to know what kind of income you'd generate per click. What kind of ads would be relevant to your site ? Can you post the link ?
There are definitely plenty of opportunities in using the affiliate channel via; revenue share deals, CPA deals, & hybrid deals. Looking for affiliate programs with no negative carry over can help if you're worried about your future monthly income being jeopardized by one bad month.
There are a number of people making a comfortable living working as affiliates out there. Seems like a stronger revenue stream long-term if you can target the right audience, and land a couple of big players.
Adsense is really simple to use as well, and probably better for passive income. Especially good if you can't be bothered to set up a gazillion affiliate accounts!
I think the best away is still de affiliate with a nice CPA deal. Much better. For adsense you need a higher traffic!
Affiliate is the way to go but NOT CPA.
The revshare player value will almost always be higher than cpa.

Advertisement blindness of the readers can cause you earn less so you have to spend much time for trial & error.
Affiliation :
+'s : Even 1 player can make you earn 5 digit commission!
Lifetime revenue! even if you close your site that generated the referral(s)
-'s : Even low traffic can make you earn much.
More time consuming on affiliate manager relations and terms.
Money withdrawal (commission) methods may be limited.
Choice is yours but my recommendation is :
Combine both ! Use AdSense in the blogs and long worded content. And use affiliation links/banners on the strategical and critical information pages.
Affiliation is worth tens of thousands of pounds / dollars / euros a month to a large affiliate.
I know there will be many affiliates reading this that will personally confirm that.

Adsense makes serious money for Google, and crumbs for publishers IMO.

Universal4 i agree generally but some affiliation programs officially removes the referrals players after a certain period (3 years approximately) and some of them do not reflect the real commissions to you. So good CPA makes the birds come in to your pocket from the tree!
If you have traffic form country where gambling is legal (like the one where people say "How do you do!" as a greeting) and you have local company you can get relevant gambling ads and have high CPC.
Otherwise you'll get cheap unrelated advertisement and will have less than affiliate for sure.

Most players will pay you way more in 3 years on revenue share than a high CPA would, so the logic of cpa paying more because the program will steal the player from you in 3 years is flawed.

It kinda goes without saying that these are not the programs to promote! The likes of Sportingbet (24 months), Bwin and Betfair are to be avoided. Only promote reputable firms with lifetime. By reputable I mean firms without any history of changing terms retrospectively. Firmly in the rev share camp. CPA is short-term thinking.
