Is it good for SEO to also have news stories? Opinion pieces etc etc?
Or, should I stick with nothing but previews.

Adding news stories, opinion pieces and how to articles will definitely add more depth to your website in both the eyes of Google and your visitors.
Punters mostly interested in match previews will likely leave your site after reading them, but if you also offer in-depth strategy and tips articles, they might stick around and keep coming back for more.

Any kind of not duplicated rich content is good for your website, if you can manage to focus on what the gamblers would search for.

Adding additional content is always good. In fact additional content will surely increase the engagement of the visitors with your website!

It's definitely a good idea to diversify the type of content you have on your site to build authority. That said, it depends what your long term goal and strategy is for the site. If it's a 100% preview site than that's a different answer. If you are looking to build an authority in sports betting you may want other types of content. Just my 2 cents.
