Can anyone tell me from experience how long it takes for Google to remove a URL from it's index if the process my side is to set the URL to - 'no-index' and remove the URL / group of URLs from a site map.

Between 30 min up to a few days after the removal request in GSC.

OK - but is a 'removal request' the same as setting the URL to 'no index' and deleting the site map?

I'd say you wanna :
1 - make removal request in search console
2- make the url noindex
3- don't do anything to your sitemap
only opting for removal will mean reindexing at some future stage unless you do step 2.

OK - we already deleted the site map at the same time as setting the URLs to 'no-index'. Is that an issue? Does this mean google will not know to de-index the pages?
Important point - the URLs are not accessible by any other route than the site map. They are system URLs generated as part of a system tool we set up - they have no purpose for users and shouldn't have been part of any site map. Yoast created one automatically however.

don't delete sitemap

exclude path or urls in search console, and do a noindex in page <head> on your target pages.

I think the last time when i tried to remove url it took maybe like 3 days
