I don't think Google prioritize https over http in the results order (yet). If it looks so that's more a coincidence as a lot of sites have already switched.

I have switched to https for couple of sections on my site where paid stuff is located and it went all seamless, Google updated all indexed pages to https:// very fast.

I even went to WMT and put in a few crawl+render+index requests to our most popular pages new https:// versions.

Yet still all the SERPS are returning HTTP://EXAMPLE.COM (our prior canonical). How long does it typically take Google/Y/B to start returning https:// results in the SERPS? I'm starting to wonder if somehow I overlooked something...

I suppose I spoke too soon. Started getting data and https results last night. Strangely though, the pages that are starting to rank with https results are all old pages from 2012! No money pages, just garbage pages. Thanks for the priortization big G! I'm going to go noindex, follow all of those garbage pages now and hopefully speed up the crawling of the https pages.

Ok, we completed the switch to HTTPS 2 days ago. I still don't see HTTPS in SERPS. Also I notice in Search Console index status our number of indexed pages has around doubled. Should I be concerned here? Should we be redirecting old pages or to HTTPS?

Depends on your short/long term targets.
    HTTPS ranks better.
However, when you switch, you will probably lose rankings which might take a couple of weeks.
If you already have huge traffic, well... I wouldn't risk.
If you feel like you are just in the beginning of the marathon.... Go for it.

I'm 7 days in and saw almost every one of our pages was crawled a few days ago, and 2 days after that 2/3rds of them were crawled again. I haven't gotten the Search Console data in yet to see what changed, but our traffic is up, and all our stats are better only seven days post https upgrade. Very few of my money pages are showing in SERPS as https at this point... it's as if Google is updating the SERPS for the worst/shortest/oldest/least visited pages, bottom up, instead of the best pages and working its way down heh.

I'm encouraged by the traffic results thusfar (it could also have something to do with our hosting being faster as we moved hosts at the same time we enabled HTTPS:

    Hello,

    I highly recommend

"Really Simple SSL" from Rogier Lankhorst

    and

"SSL Insecure Content Fixer" from WebAware

Above 2 will be working for you smoothly.

There is no doubt that https is included in one of the elements constituting the google ranking. But there are things that did not affect the ranking even if changed.
    Now it's like this ...
In the future, https will become stronger certainly.

Exactly. Google take cares of the searchers' security and user experience. So a properly configured HTTPS site will contribute to your ranking success...

Https is the future, so everyone has to do it soon or later

Exactly. So it is better to take the front seats as "Early bird catches the warm!"

We have been switching our websites to https since the beginning of the year and see traffic increase. Google has officially announced that using a HTTPS is a ranking factor and I think this is the case.

We are slowly transitioning all our sites over to https but have not yet noticed much difference.

You have to transform the whole site all at once otherwise you will see harm from this rather than waiting for the positive effect.

https is the best option, Google is taking it as a ranking factor too.

Move to HTTPS isn’t going to give you a huge increase you’re ranking on Google, but is part of the algorithm requirements. Like the “extra point”

Oh absolutely. That's what I meant when I said "slow transitioning", but thanks for the reminder. ^.^
