I like Mainstreet and Vegas Affiliates, honestly VegasAffiliates pay commissions very late but I like them. Also I may recommend Gambling Wages. I have a lot of favorite programs, so if you want to know more pm me.
Also you may find a lot of good programs in GPWA directory.
I agree with askana about Vegas affiliates, although to be honest I liked VA better when they had the radio button selection of banners. The whole new tracking code thing probably makes for better stats, but campaign tracking for a small site like mine is just a cumbersome pain in the ass.
Another great program, in my opinion is Casino Rewards. It's easy to grab marketing material and linking codes, the site is just very well organized.

Yes, I also like Casino Rewards for their a wide variety of marketing materials and good stats but I don't do with them a lot, but I'd like and I hope I will.
Of course the affiliate programs we promote are very important and I am happy to see that GPWA members are willing to share those programs with others.
But the fact is that, no matter what affiliate program we promote, we will not make a dollar unless we get hits to our sites.
I am looking into RSS feeds and free news to give my sites more CONTENT and also very busy at trying to write ARTICLES.
From a dummie like me and to make it short, that ADD CONTENT thing we keep seeing and chose to ignore for the most part is what needs to be done instead of hoping to find an affiliate site that will magically bring you a hundred bettors betting thousands of dollars ain't gonna happen.

As for which affiliate programs to sign up with. Take a look at my casino webmasters page. All the recommended programs there, I have affiliated with for a number of years. They are responsive and pay out regulary and quickly every month.
